How To Make Super Easy Lemon Cheesecake
Seems to be a pretty popular request, so I figured I’d post the recipe. After reading it, you’ll agree it’s super easy.
Preheat oven to 450 degrees
For the crust you will need:
- 3 tbsp melted butter
- crumbled graham crackers or shortbread cookies
Spray pie pan with cooking spray, mix butter and crackers/cookies together, and press into bottom of pan. If you’d like, you can buy a pre-made graham cracker crust and put that in the pan. (Not sure if I’ve seen a shortbread one, but doesn’t mean they’re not out there).
Pie filling:
- 1-1/2 tbsp lemon extract
- 1/3 cup lemon zest
- 3/4 cup sugar
- 3 eggs
- 3 packages Philadelphia Cream Cheese
In large mixing bowl, beat together cream cheese and sugar together until blended. Mix in eggs, one at a time. Next add lemon extract. Mix in half of the lemon zest. Pour ingredients into crust. If you’d like, you can sprinkle the remainder of the zest on top.
Put pie in oven and bake for 10 minutes. Reduce heat to 250, and bake for another 30-35 minutes. Remove and allow to cool for 30 minutes or so., then put in fridge for about 2 hours.
